KETO CINNAMON BAGEL BITES

Keto cinnamon bagel bites make for an awesome breakfast, or even a sweet dessert after a meal. Take these on the go, or enjoy them at home. It is impossible to go wrong with these keto bagel bites.

INGREDIENTS
  • 1 cup Almond flour
  • 3 tbsp Coconut flour
  • 3 tbsp Lakanto Powdered Sweetener, or choice of sweetener
  • 2 tsp Baking powder
  • 1 1⁄2 cup Shredded mozzarella cheese
  • 2 oz Cream cheese
  • 1 tsp Vanilla extract
  • 1 Egg, beaten

COATING
  • 1 tbsp Melted Butter
  • 2 tsp Cinnamon
  • 1 tbsp Lakanto Monkfruit Classic, or choice of sweetener

INSTRUCTIONS
  1. Preheat the oven to 400 degrees.
  2. Place the mozzarella cheese and cream cheese into a microwave safe bowl. Microwave for 1 minute, stir, and continue to heat at 30 second intervals until the cheese is completely melted and well blended.
  3. In a seperate mixing bowl, combine the almond flour, coconut flour, baking powder and sweetener.
  4. Add in the melted cheese, and knead it into the dry ingredients with your hands.
  5. Once combined, add in the egg and vanilla extract. Beat the mixture on high until thoroughly mixed.
  6. Place the dough into the fridge for 30 minutes.
  7. Remove the dough from the fridge and form it into 16 even sized balls.
  8. In a small bowl, combine the cinnamon and granulated sweetener until well combined.
  9. Brush the butter onto each of the bagel bite dough balls.
  10. Roll the butter coated bites into the cinnamon/sweetener mixture, and place the onto a well greased baking sheet.
  11. Bake for 10 minutes until browned and cooked through.
